CAPSICUM RICE


CAPSICUM RICE

Ingredients:
1.       Cooked rice – 3cups
2.      Capsicums -2 (big size)
3.      Ghee/oil – 2tsp
4.      Curry leaves – few
5.      Salt to taste
6.      Roasted peanuts for garnish.

Masala powder:
Roast the following ingredients in ghee and grind them into a powder along with grated coconut.
1.       Red chillies – 3 to 4
2.      Coriander seeds -  1 tsp
3.      Cumin seeds – 1tsp
4.      Urad dal – 1tsp
5.      Cinnamon stick -1″
6.      Peanuts – 2tsp
7.      Grated coconut – 1tsp
8.      Ghee(clarified butter) – 2tsp
9.      Lemon juice – 1tsp(optional)

Method:
·         In a wide bottom pan heat oil /ghee, add mustard seeds and curry leaves.
·         After the mustard starts spluttering add capsicum pieces and cook for 5min.(Do not over cook the capsicum)
·         To this add the above ground powder, salt and mix well.
·         Reduce the heat and add the cooked rice and combine with the mixture and salt well.
·         Turn off the stove, add roasted peanuts at the end, mix well and serve with raita or any gravy of your choice.

Spicy lemon rice


Spicy Lemon Rice
   Ingredients:
Cooked rice: ½ kg
Lemon: 4(Big size)
Chick pea: 100 gms (soaked for 1 night and boiled)
Asafetida: ¾ tsp
Turmeric powder: 1tsp
Mustard seeds: 1 tsp
Cumin seeds: ½ tsp
Green chilies: 10(chopped)
Fresh coconut: small cup (Grated)
Curry leaves
Coriander
Oil: 3 tsp
Salt to taste

Preparation:
Ø Take a pan and heat oil then add mustard seeds, cumin seeds and fry for a while.

Ø Then add chopped green chilies, curry leaves, 1/4th of coriander and fry for a while.

Ø Then add turmeric powder, asafetida and then add the chick pea, grated coconut and lemon juice and turn off the stove.

Ø Then add the cooked rice, salt and sprinkle coriander and mix well.
Serves 5 people.

Omlet curry recipe


OMLET CURRY
Ingredients:    
Eggs: 4
Potatoes: 2(medium size)
Tomatoes: 3(big size)
Onions: 4(medium size)
Green chili: 4
Curry leaves
Coriander
Coconut: 1 small cup (cut into small pieces)
Oil: 3 tsps
Ginger-garlic paste: 1 tsp
Cumin seeds: ½ tsp
Cloves: 3 or 4
Cinnamon: 2 small pieces
Coriander powder: 1tsp
Chili powder: 2 tsp’s
Salt to taste

For masala preparation:
Grind coconut, 1 onion and 3 tomatoes to fine paste.

For omlet preparation:
Ø Firstly chop finely 1 onion and green chili’s
Ø Then take a non-stick pan and heat oil and put an omlet and sprinkle chopped onions and green chilies and sprinkle little salt.
Ø Then fold the left and right sides of the omlet on to the center of the omlet and turn the omlet upside down.
Ø And after a minute cut the omlet into two halves.
ØThen repeat the above 4 steps for remaining 3 eggs.

For gravy preparation:
Ø Now firstly slice the remaining two onions and cut potatoes into medium cubes
Ø Now take a pan and heat oil and add cumin seeds, cloves, cinnamanon and fry for 1 minute.
Ø Now add onions and curry leaves and fry them until onions turn into light golden color and then add ginger garlic paste and fry for 2 minutes.
Ø Now add the prepared masala paste and add chili powder, coriander powder, salt and fry for2-3 minutes.
Ø Now add potatoes and add 3 cups of water and put the lid and let it boil for ten minutes.
Ø Now the gravy is prepared so add the prepared omlets and give a light stir, make sure you won’t break any omlet and sprinkle coriander.

OMLET CURRY IS PREPARED..!!
Serves 4 people
               Omlet curry is best enjoyed with rice, chapathi’s , puri and nans.
